A few years ago I was looking for a way to use garlic scapes and I came up with an amazing recipe!
After sharing with family and friends and experimenting with this delicious condiment on pasta, roasted vegetables, egg dishes, and more, I was encouraged to make it for my customers as well. I have sampled it out at festivals and at Mill City Farmers Market, and if people like garlic they just love this pesto!
We create Escape! Garlic Scape Pesto at a commercial kitchen, and our process and facility is state inspected. In 2021 we made 1500 jars of pesto at the Kenyon VFW kitchen, in 4 days!
Escape! Garlic Scape Pesto is gluten-free and nut-free, using organic pumpkin seeds instead of a traditional pesto’s pine nuts.
Ingredients include: organic olive oil, organic garlic scapes, organic pumpkin seeds, organic lemon juice, Pecorino Romano cheese (pasteurized sheep’s milk, culture, salt, enzymes), organic basil, salt, organic pepper

Escape! is seasonal, and is only made in the summer after the scapes come in. We made a total of 1500 jars in 2021.
We create Escape! at a commercial kitchen, and our process and facility is state inspected.
We recommend that Escape! be stored frozen. Once opened Escape! should be refrigerated, and can be kept refrigerated for 5 weeks.
